Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 8 tablespoons butter, cubed
- 3/4 cup milk, (more or less if needed)
Preparation:
- Preheat oven to 425°F.
- In a large bowl combine flour, sugar, baking powder and salt together. Cut butter into mixture until it begins to look like cornmeal.
- Make a well with flour mixture and slowly add milk into the middle. Knead dough with your fingers and add milk when necessary. Roll out dough onto a lightly floured surface and roll out to desired thickness. Cut with small biscuit cutter.
- Butter bottom of skillet and place biscuits in pan. Bake for 12 minutes or until golden brown.

Ingredients:
- 1/2 cup(s) unsalted butter
- 2 1/2 cup(s) all-purpose flour (sifted twice before measuring)
- 1tablespoon(s) baking powder
- 1teaspoon(s) salt
- 1cup(s) cold buttermilk
- 2tablespoon(s) cold buttermilk
- 1tablespoon(s) melted butter
Directions:
- Heat oven to 475 degrees F. Cut butter into small cubes and freeze 15 minutes. Stir dry ingredients together in a large bowl.
- Cut in butter using either a pastry blender, two knives, or your fingers until mixture resembles a coarse meal.
- Stir in buttermilk using a fork just until dough forms. Knead 3 to 4 turns on a lightly floured surface and pat into a 7- by 10-inch rectangle. Cut out biscuits using a 3-inch cutter (gathering scraps until all dough is used).
- Place 2 inches apart on a baking pan. Brush tops with melted butter.
- Bake on top shelf of oven 16 to 18 minutes. Transfer to a wire rack. Serve warm or at room temperature.
Tips & Techniques:
- Out of buttermilk? Use "soured" milk instead. For this recipe, combine 1 tablespoon lemon juice or white vinegar with 1 cup plus 1 tablespoon milk. Let the mixture stand for 5 minutes, or until it begins to thicken.
- While the classic accompaniment remains butter, biscuits can also support a range of sweet and savory fillings. Pair hot mustard and honey with fried chicken tenders, or try Cheddar spread with roasted turkey and mango chutney. On a sweeter note: Layer Nutella with fresh pineapple, or go the British route with clotted cream and strawberry jam.

- 2-1/3 cups Whole Milk
- 3 Tablespoons White Distilled Vinegar
- 6 cups Self-rising Flour, Plus More For Kneading
- 1-1/2 teaspoon Salt
- 3/4 cups Lard (OR Butter OR Shortening OR A Combination)
- Melted Salted Butter, For Brushing
Preparation&Instructions:
- (Important note: You may substitute 2 1/2 cups buttermilk for the milk/vinegar mixture.)
- (Important note #2: If you use salted butter instead of shortening/lard, decrease the amount of salt you add.)
- Preheat the oven to 475 F.
- In a measuring pitcher, combine milk and vinegar. Stir together and set aside for 10 minutes. Note: You can use 2 1/2 cups buttermilk instead of the milk and vinegar if you have some on hand.
- In a large bowl sift together the flour and salt. Use a pastry cutter to cut in the lard (or butter or shortening or both) until the mixture resembles coarse crumbs.
- Pour the wet ingredients into the dry ingredients, stirring gently with a fork or wooden spoon until it all comes together. Flour the surface, then turn out the dough and knead 10-15 times, adding a little flour so it's less sticky.
- Roll out dough to 1/3 to 1/2 inch thick and use a biscuit cutter to cut medium to small circles. Place on a baking sheet 1/2 inch apart and bake for approximately 10 minutes, or until golden brown on top. Remove from oven and immediately brush on melted butter. To die for!
- ***Baking time will vary depending on the size of the biscuit cutter you use. I made mini biscuits, which took about 9 to 10 minutes. Larger biscuits will take longer, so keep an eye on them as they bake.
