Ingredients

  • 90 g
  • Butter (unsalted) softened
  • 100g
  • Unrefined golden caster sugar (we use Billington's)
  • Unrefined golden caster sugar
  • 1 Egg(s) (free range)
  • ½tsp Vanilla extract (we use Nielsen-Massey)
  • 200g Plain white flour (we use Allinson)   
  • ½tsp Baking powder
  • ½tsp Salt

The Method:

  • STEP 1:Sieve the flour, baking powder and salt into a bowl and set aside.
  • STEP 2:In a large bowl cream the butter and sugar until pale. Beat in the egg and vanilla extract.
  • STEP 3:Add the flour to the butter mix and mix until the dough is formed.  Wrap the biscuit dough in clingfilm and chill for at least one hour.
  • STEP 4:Preheat the oven to 170°C (150°C fan, gas mark 3). Roll the dough out on a lightly floured surface to about 0.5cm.
  • STEP 5:Cut out the biscuits and transfer to baking sheet. Roll up the trimmings and repeat stages above to make more biscuits. Bake for 8 – 12 minutes until golden.
  • STEP 6:Remove and transfer to a cooling wire and leave until completely cool before decorating.

Second Recipe To Make Biscuit Dough:

Ingredients:
  • 8 oz. (1-3/4 cups) unbleached all-purpose flour; more as needed
  • 2 tsp. baking powder
  • 1 tsp. granulated sugar
  • 1/2 tsp. baking soda
  • 1/2 tsp. table salt
  • 3 oz. (6 Tbs.) cold unsalted butter, cut into 1/2-inch pieces
  • 3/4 cup cold, well-shaken buttermilk
Method:
  • In a large, wide bowl, combine the flour, baking powder, sugar, baking soda, and salt. Using a pastry blender or your fingertips, cut in the butter until the mixture resembles coarse meal with some pea-size lumps.
  • Using a silicone spatula, stir in the buttermilk just until the flour mixture is moistened. Do not overmix; the dough should just come together, and it will be sticky.
  • Transfer the dough to a floured work surface and gently knead 6 to 8 times, dusting lightly with flour if needed to keep it from sticking.
Make Ahead Tips:
  • The flour and butter mixture can be refrigerated in a zip-top freezer bag for up to 1 week, or frozen for up to 1 month. If frozen, thaw at room temperature for 30 minutes before proceeding with the recipe.

  • 110 g caster sugar
  • 275 g plain flour
  • ground spices or finely grated zest

Method:

  • Preheat oven to 180 C / Gas 4.
  • Cream the butter in a large bowl or in a food mixer until soft. Add the sugar and beat until the mixture is light and fluffy.
  • Sift in the flour and spices or grated zest (if using) and bring the mixture together to form a dough.
  • Using your hands,roll the dough into walnut-size balls and place them slightly apart on a baking tray. Flatten them slightly and bake in the oven for 13-15 minutes or until they are a light golden brown and slightly firm on top.
  • Carefully transfer the cookies to a wire rack to cool.
  • Additions:
  • Poppy seed: Add 2 tablespoons of poppy seeds to the flour.
  • Lemon: Add the finely grated zest of 1 lemon to the flour.
  • Orange: Add the finely grated zest of 1 orange to the flour.
  • White chocolate and orange: Dip the tops of the orange cookies in 50g of melted white chocolate, then allow to set on greaseproof paper.
  • Spices (cinnamon, mixed spice, ginger): Add 1 teaspoon of a ground spice to the flour.
  • Double chocolate chip: Use 250g plain flour and add 50g sifted cocoa powder to the flour. Bring the dough together and mix in 125g dark or white chocolate chips.

Tip:

  • Always remove cookies from their trays while still warm otherwise they will stick.
  • Roll leftover dough into a log shape, then leave in fridge for up to 2 weeks or freeze for up to a couple of months. To bake, cut off slices about 1cm thick and cool on a baking tray in a preheated oven

Ingredients:

  • 250g butter (cut into small pieces, softened)
  • 140g caster sugar
  • 300g sifted plain flour
  • 1 egg yolk
  • 2tsp vanilla extract
Directions:
  • To make the dough: Mix the butter and sugar together until its really light and fluffy looking.
  • Break the egg and separate the yolk and white, keeping the yolk and adding it to the butter and sugar mix.

  • Cut circles with the rim of a clean glass or use cookie cutters to make shapes.
  • If you want to make more complicated shapes, you’ll find this kind of dough easy to cut however you want, with a small sharp knife.
  • To bake your butter biscuits: Grease a baking tray and lay out the biscuits with a little gap between each.
  • Bake in a preheated oven at 180°C (gas mark 4) for 12-15 minutes.
  • Don’t forget that they will harden more when they’re cooling so take them out of the oven when they are still a little bit soft.
  • Carefully slide them off the tray and cook on a rack.
  • Decorate them with icing and store in an airtight box. If you don’t end up eating them all straight away!

Ingredients:
For the filling:

  • Cooking spray
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 1/2 pounds boneless, skinless chicken breasts, cut into 1/2-inch chunks
  • 4 teaspoons olive oil
  • 1 medium onion, chopped
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1/2 pound green beans, trimmed and chopped into 1/2-inch pieces
  • 2 cloves garlic, minced
  • 1 1/2 cups lowfat milk
  • 1/4 cup all-purpose flour
  • 1 cup low-sodium chicken broth
  • 1 cup peas, thawed if frozen
  • 1 1/2 tablespoons fresh thyme leaves
  • For the biscuit crust:
  • 1/2 cup whole-wheat flour
  • 1/4 cup all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 tablespoons cold unsalted butter, cut into small pieces
  • 2 tablespoons canola oil
  • 1/2 cup lowfat buttermilk

Directions:

  • To make the filling: Preheat the oven to 375 degrees F. Spray a large shallow casserole dish, or 6 individual casserole dishes with cooking spray.
  • Season the chicken with 1/4 teaspoon each salt and pepper. In a large nonstick skillet, heat 2 teaspoons of the oil over a medium-high heat. Add the chicken to the pan and cook for 5 minutes, stirring occasionally. Transfer the chicken with its juices to a bowl. .
  • Add 2 more teaspoons of oil to the same pan and heat it over a medium-high heat. Add the onions, carrots and celery and cook until the vegetables begin to soften, about 3 minutes. Add the green beans, garlic and remaining salt and pepper and cook for 2 minute more. Add the milk. Stir the flour into the broth until it is completely dissolved and add to the pan. Cook, stirring, until the mixture comes to a boil. Reduce the heat to medium-low and cook for 2 minutes more. Return the chicken with its juices back to the pan. Add the peas and thyme and stir to combine. Season with salt and pepper, to taste. Spoon the mixture into the baking dish or individual dishes.
  • To make the crust: Put the whole-wheat flour, all-purpose flour, baking powder, baking soda and salt into a food processor and pulse a few times to combine. Add the butter and pulse about 12 times, or until pebble sized pieces are formed.
  • Add the buttermilk then oil to the food processor and pulse until just moistened. Do not over mix. Drop the batter in 6 mounds on top of the chicken mixture (1 mound on each individual dish, if using) spreading the batter out slightly. Bake until filling is bubbling and the biscuit topping is golden brown, about 20 minutes.

  • 1 can (10 3/4 ounces) Campbell’s® Condensed Cream of Chicken Soup or Campbell’s® Condensed 98% Fat Free Cream of Chicken Soup

  • 3/4 cup shredded Cheddar cheese

  • Large pinch of cayenne pepper
  • 10 small boneless, skin-on chicken thighs
  • Vegetable oil (for frying)
  • 1 cup all-purpose flour
  • 6 tablespoons peanut oil
  • 1 large egg
  • 1 tablespoon baking powder
  • 1 1/4 teaspoons cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 10 slices cheddar (optional)
  • Sausage Gravy (optional)
Special equipment:
  • A 3" biscuit cutter
Preparation:

For biscuits:
  • Preheat oven to 400°F. Place butter and shortening in freezer for 10 minutes.
  • Blend 4 cups flour and next 5 ingredients in a food processor. Add butter and shortening. Pulse mixture until it resembles coarse meal, 20–25 pulses. Transfer mixture to a large bowl. Gradually add buttermilk while tossing mixture with a fork (mixture will not be completely incorporated). Knead in bowl with lightly floured hands just until dough forms, about 3 turns.
  • Transfer dough to a lightly floured surface. Pat out dough until 1" thick. Lift 1 side and fold it over. Gently repeat 5 more times. Roll dough to 3/4"-thick round. Using a 3" biscuit cutter, cut biscuits from dough. Gather scraps and repeat patting out and cutting biscuits for a total of 10 biscuits.
  • Place biscuits on a parchment paper– lined baking sheet, spaced 1"–2" apart. Bake until golden brown and a tester inserted horizontally comes out clean, 12–15 minutes. Transfer biscuits to a wire rack; let cool slightly. Serve warm or at room temperature. DO AHEAD: Can be made 8 hours ahead. Let cool completely. Store airtight at room temperature. Rewarm before serving.
For fried chicken:
  • Whisk buttermilk, dill, 1 1/2 teaspoons salt, 1 teaspoon pepper, and cayenne in a large bowl. Add chicken; turn to coat. Cover; chill at least 3 hours or overnight.
  • Pour vegetable oil in a large pot to a depth of 2". Attach a deep-fry thermometer to side of pot. Heat oil over medium heat to 350°F.
  • Whisk 1 1/4 cups water with remaining 2 teaspoons salt, remaining 3/4 teaspoon pepper, flour, and next 6 ingredients in a large bowl. Drain chicken well; pat dry with paper towels. Working in batches, dip chicken into batter. Fry chicken, turning occasionally, until skin is crispy and golden brown and chicken is just cooked through, 9–12 minutes per batch. Drain chicken on paper towels.
  • Split biscuits in half; place 1 bottom half on each plate. Top each with a cheese slice, if desired, then a chicken thigh. Spoon Sausage Gravy over chicken, if desired. Place biscuit top over.

  • 4 oz soft brown sugar
  • 1 level tsp bicarbonate of soda
  • 2 oz butter
  • 1 heaped tsp ground ginger
  • 1 rounded tsp golden syrup
  • 1 egg

Method:

  • Place the dry ingredients in a dish.
  • Mix all the ingredients (except the egg) together and add the beaten egg bit by bit to make a stiff consistency.
  • Roll in hand to about the size of a walnut. Bake for 15-20 minutes at 180C (350F) (Gas 4)

  • 225 g butter, at room temperature
  • 110 g caster sugar
  • 275 g plain flour
  • ground spices, or finely grated zest (optional)
METHOD:
  • 1. Preheat the oven to 170C/150C fan/gas 3. 
  • 2. Cream the butter in a large bowl or in a food mixer until soft and creamy. Add the sugar and beat until the mixture is pale and fluffy. 
  • 3. Sift in the flour and spices or grated zest (if using) and bring the mixture together to form a firm dough. 
  • 4. Using your hands, roll the dough into walnut-sized balls and place them slightly apart on a baking tray (no need to grease or line). Flatten them slightly with the back of a damp fork and bake in the oven for 13-15 minutes, or until they are light golden brown and slightly firm on top. 
  • 5. Carefully transfer the cookies to a wire rack to cool.

Ingredients:

  • 100g/3½oz unsalted butter, softened at room temperature
  • 100g/3½oz caster sugar
  • 1 medium free-range egg, lightly beaten
  • 275g/10oz plain flour
  • 1 tsp vanilla extract
  • To decorate:
  • 400g/14oz icing sugar
  • 3-4 tbsp water
  • 2-3 drops food colourings

Preparation method:

  • Preheat the oven to 190C/375F/Gas 5. Line a baking tray with greaseproof paper.
  • Cream the butter and sugar together in a bowl until combined.
  • Beat in the egg and vanilla extract, a little at a time, until well combined.
  • Stir in the flour until the mixture comes together as a dough.
  • Roll the dough out on a lightly floured work surface to a thickness of 1cm/½in.
  • Using biscuit cutters, cut biscuits out of the dough and carefully place onto the baking tray.
  • Bake the biscuits for 8-10 minutes, or until pale golden-brown. Set aside to harden for 5 minutes, then cool on a wire rack.
  • For the icing, sift the icing sugar into a large mixing bowl and stir in enough water to create a smooth mixture. Stir in the food colouring.
  • Carefully spread the icing onto the biscuits using a knife and set aside until the icing hardens.
